We love old world amaros, enough that we asked ourselves — what would a California Amaro taste like?
And so we started with hundreds of tinctures made from common amaro ingredients, foraged herbs, local flora, and singular flavors. We immersed ourselves in landscapes. We smelled, touched, closed our eyes and envisioned what the terroir of each would taste like in an amaro.
The result is three distinct, delicious expressions that celebrate the best of California and highlight hand sourced ingredients with uniquely complex characteristics.

We set out to make amaros that surprise and delight. From our early days making small batch, experimental recipes to becoming staple spirits in the country's most celebrated cocktail bars, we've never lost our sense of curiosity. We are proud to break with tradition to create new classics that are distinctly Californian.

Brucato makes amaros using the produce, botanicals, and flavors of California. Each expression begins with local brandy and reflects the spirit of a specific landscape — from fruit orchards and redwood forests to fields of coastal chaparral. Like Italy, the birthplace of the great amaros, California is home to a bounty of exceptional ingredients and inspiring terrain, and we find beauty in bringing them to bottle.

The next chapter of Brucato is near, and we can't wait to welcome you. Opening in San Francisco in Fall 2024, the Brucato Amaro distillery and restaurant is a destination for those who want to learn, taste, and celebrate. In addition to offering distillery tours and a range of special events, our new restaurant will be a standalone dining destination with deep connections between local ingredients, our amaros, and inspired seasonal menus.

We source our ingredients straight from farmers or direct importers, local produce dealers, or through two trusted herb distributors based in San Francisco and Monterey. We avoid extracts (except vanilla, for good reasons), and we limit our filtration and processing as much as possible. Our products are natural. They vary, just as our ingredients vary from year to year depending on weather, harvesting practices, and other factors.
