A pure expression of almond. Light, bright, and not at all bitter.
Introducing our smallest-batch release to date, Spring Almond — the seasonal counterpoint to a winter nocino. Made with green almonds, grape brandy, and sweetened with cane sugar. Spring Almond is bright, aromatic, and surprisingly light. In other words, it's unlike anything we’ve made before.
Aged as long as 60 months, Spring Almond is the first release in our Experimental Series — a spirit that is years in the making and now yours to enjoy. Crafted in extremely limited quantities and labeled by hand at our distillery, it’s available only at Bar Brucato and through select distillery tours. Enjoy it in a spritz, served neat, or as a distinctive layer in your favorite cocktail.

Green Almond
Picked before they mature, green almonds bring a soft nuttiness and bright, vegetal character — a fleeting spring ingredient harvested at its peak.

Grape Brandy
Made from locally grown grapes and distilled with care, it carries a warmth and subtle complexity that lets the botanicals shine without overpowering them.

Cane Sugar
A light touch of unrefined cane sugar rounds the edges, balancing the spirit’s natural sharpness without overwhelming its botanical clarity.

What began as a simple idea — to capture the essence of green almonds in a spirit — has quietly matured and evolved for 5 years. After years of refining and waiting, Spring Almond is finally ready to share. It’s the first in our experimental series, and a first for us at Brucato.

Each release begins as an idea: a single ingredient, a fleeting season, or a sensory memory we want to distill. We chase those ideas through fermentation, maceration, aging, and iteration — crafting countless tinctures and batches until we get it just right.
These spirits are small by design. They’re made in extremely limited quantities, aged for months or years, and never made the same way twice. Some may evolve into future staples, while others exist only once — a moment in a bottle. Our experimental releases are a chance to share in something personal, fleeting, and unlike anything else behind the bar.
