Black walnuts build the layered undernotes, earthy tannins, and dark color of our Orchards amaro. In Italy, one of the most famous amaro styles – noccino – is made predominantly from unripe green walnuts. Instead of using full fruit in a green state, we source dried hull, a byproduct of the American walnut harvest. We love the rich flavor it gives our amaros; and it is always satisfying using a product that might otherwise be diverted to non-food uses and helping it shine. Plus beauty of walnut trees is beyond compare, so we love any chance to collect our own fruit.
